These Mexican Tortilla Rolls Ups are going to be your new party favorite!!! Filled with juicy tomatoes, fresh cilantro, and some delicious spices to top it off, you will love these fresh and creamy rolls ups.
We tend to do a lot of get togethers, which means I have gone through my fair share of sandwiches and quick snacks! So I always love to have something new on the table for those late tea nights! This is a great and fast way to replace the usual tea sandwich and everyone will love these little bite sized pieces!
Ingredients to Make Mexican Tortilla Rolls Ups:
15-20 small sized flour tortillas (or 10 large tortillas)
1 1/2 cups shredded chicken (rotisserie or canned chicken breast works)
1 large red pepper
1 cup mexican mix cheese
4 sprigs green onion
1/4 cup cilantro
1 14.5 oz fire roasted diced tomatoes
2- 8 oz softened cream cheese
1/2 teaspoon paprika (if you like some spice, smoked paprika works great)
1/2 teaspoon garlic salt
1/2 teaspoon cumin
1/2 teaspoon salt
How to Make Mexican Tortilla Rolls Ups:
Dice up your red pepper, chop up cilantro, and slice up your green onions. Add all this to a medium sized bowl.
In the same bowl add your shredded chicken, cheese, drained tomatoes and seasonings. Mix this all in together.
Add your softened cream cheese, and slowly mix in until fully incorporated.
Spread about a 1/4 cup of your Mexican cream cheese spread on each tortilla. Roll up your tortilla and cut into 1″ pieces.
